For the birthdays of my beloved ones, most often I order cakes, because they are always beautiful and delicious. It could be said, that these days, I prefer to stay on the “safe side”. On the other hand, I could hardly spare as much time as it would take to make a cake…..
Well, the birthday of my grandma came ( she turned 87 years). She has always made cakes for my and my sister’s birthdays. They were not just cakes, but the most delicious ones as well. All that she makes comes out of her heart and soul, the cakes are the pure prove of all that. Nevertheless of her tiredness and the fact that with time it becomes more and more difficult for her, she continuous to make us happy with them.
I am more than sure that my granny’s cakes are so delicious because they are made with a great love and wish – that was my motivation this year. I decided to risk and to make a tasty cake, seasoned with much love and desire.
Cake with mascarpone

Needed products:
A flan case, it can be made from two small flams with dimensions 16sm, or to use the bigger size and to be one floor cake. I didn’t have the small sized ones and did used the bigger case – 24 sm.
1 and ¼ tea cup white flour
A pinch of salt
2 tsp baking powder
200 gr softened butter ( at room temperature)
3/4 tea cup white sugar
3 eggs ( at room temperature)
2 tbsp milk ( at room temperature)
Cream of mascarpone
400 gr mascarpone
2 tbsp powdered sugar
3/4 tea cup liquid cream
* Fruits for the decoration by your own choice. I used blueberries, blackberries, raspberries and blackcurrants
Way of preparing:
- Mix the flour, baking powder and salt in a bowl
o Use another bowl to beat the butter and sugar with a mixer (you should get a fluffy cream).
o Add the eggs one by one and beat well after each one.
o Put into the bowl with flour the resulting mixture and mix well with a spatula. Add the milk and stir until you get a homogeneous mixture.
o Prepare two flan cases with dimensions of 16 cm or one with a larger size. Place baking paper on the bottom of the cases. Grease with oil and sprinkle with flour so that it does not stick to the paper.
o Distribute the mixture in the prepared cases and bake in a preheated oven at 175 ° C for 25-30 minutes or until the flans are baked.
Cream:
o Beat the mascarpone and the powdered sugar in a bowl until a creamy mixture is obtained. Slowly add the liquid cream and continue to beat until the mixture is homogeneous but firm and can be spread.
We are almost ready:
Once the flans are completely cooled, we level them up. Place one of the flans on a plate and spread it lavishly with the mascarpone (about half of the mixture goes for one flan). Cut the fruits and spread them on the spread cream. Place the second flan and spread it with the rest of the cream. Garnish with fruit.
I would say that the cake became really very tasty (probably because of the love with which I've made it). I'm thinking of starting to follow the idea of "more homemade cakes with love" and less ready-made ones.
